Crock Pot Barbecue chicken

When my hubby and I first got together we made a deal, he cooks, I clean. Some 19 years later…… he cooks and I’m still cleaning. I would say that the deal is working out nicely. And truth be told, I do like to bake…and eat what I bake.  If you are looking for more then a good recipe you can read my tips for a successful marriage here and snippets of our love story here and here. And although I can’t take credit for this Crock Pot barbecue chicken recipe, I can take credit in sharing one of my favorite ways that he cooks it for the family.

Crock Pot Barbecue chicken

We love to cook meals and snacks in the crock pot, especially on the weekends when we are outside for most of the day. Cooking barbecue chicken could not get any easier then putting it in the crock pot and then finishing it off under the broiler in your oven. This chicken falls off the bone when you cook it this way. And broiling it, allows the barbecue sauce to caramelize on your chicken pieces giving it that crispy barbecue taste.

Crock Pot Barbecue chicken

Crock Pot Barbecue chicken Recipe

  • Place chicken breasts and legs (all with skin) in a crock pot
  • Sprinkle Barbecue Rub and salt and pepper on each piece
  • Cook on low for 3 hours
  • Remove from crock pot and immediately on to a baking sheet
  • Generously apply your favorite barbecue sauce to each piece on as much of the chicken as you can
  • Place in oven on low broil for 30 mins to an hour. This will depend on how well your chicken was cooked in your crock pot. Tip: If you chicken gets too crispy or dry, it’s time to come out of the oven.
  • Let sit for a few minutes before serving

    1. It really all depends on how well the chicken was cooked in the crock pot. I checked with my hubby ( the head chef around here 🙂 ) and I should have written it to read ‘up to 1 hour’. I edited the post instructions to read from 30 min to 1 hour since chicken and cooking times will vary.
