Simple Asparagus and Tomato Pastry that is so easy and makes a delicious lunch or dinner option

You know  I am all about whipping up easy and  simple dishes and this one makes the list. I was clipping coupons the other day and came across a recipe that I knew I had to try. I don’t know if it was the picture that sucked me in or the fact that it was covered in my favorite veggies, but I had to make it.

Simple Asparagus and Tomato Pastry

One would probably not put asparagus and tomato on a pastry. I know when I think pastry I think of something sweet. Honestly I don’t know what to call this other than good. It is super easy to make and  you only need a few ingredients. The best part though is that you can add veggies that you like. Much to my surprise, roasted asparagus and tomato together tastes amazing. Have you ever had them together?

What you need

Simple Asparagus and Tomato Pastry

As I mentioned this dish only requires a few ingredients and items that you may already have in the frig.

1 sheet of frozen puff pastry

1/4 cup of sour cream ( light if you want healthy version)

3 thinly sliced Roma tomatoes

1 pack of fresh asparagus

1  tbsp of olive oil

1/2 cup grated Parmesan cheese

salt and pepper

What you do

Simple Asparagus and Tomato Pastry

  1. spread pastry on a lined baking sheet ( parchment paper) poke holes in the pastry with a fork
  2.  spread sour cream over the pastry sheet, leaving a 1/2 inch around the edge.
  3. place sliced tomatoes on the pastry and top with the asparagus
  4. sprinkle the Parmesan cheese, salt and pepper and drizzled olive oil on the entire pastry sheet
  5. bake for 25-30 mins in 425degree oven and top with additional Parmesan cheese 

Like I said, this pastry is so easy and simple. Takes about 5 mins to prep, 30 mins to cook and 1 minute to eat….4 mins if you are using a fork and knife to cut it up ( aspargus are tough to eat whole :) I am going to experiment with other things to add on top. I will let you know what works.
