Easy Pineapple Upside Down Cupcake Recipe

We all know, love, and probably have made the classic pineapple upside-down cake. Why not, it’s easy to make and eat…..especially when you make them in individual-sized cupcakes.

There is nothing different about this recipe from the classic except using a large or jumbo-sized muffin tin to make the cupcakes. Although we love the cake version around here, I find that the cupcake size is just perfect for a single serving. The good thing about using a jumbo muffin tin rather than a regular-sized cupcake liner is that a pineapple slice fits perfectly on the bottom. When you flip it over you’ll have a perfectly shaped pineapple upside-down cupcake.

Easy Pineapple Upside Cupcake Recipe

You can certainly go homemade (and good for you!) but I prefer using the Pineapple Supreme or vanilla cake mix. So this recipe is for the Easy Pineapple upside-down cupcake using box mix.

Ingredients

  • one box of Pineapple Supreme or Vanilla cake mix (see box for additional cake ingredients and follow box instructions)
  • 2 cans (8-ounce) pineapple slices in 100% pineapple juice
  • 1 cup firmly packed light brown sugar for the bottom and top of the cupcake
  • Maraschino cherries for garnish (optional)

How to make Pineapple Upside Down Cupcakes

  1. Gather ingredients (water, oil, egg whites) and prepare box cake mix

  2. Preheat the oven to 350 F degrees

  3. Spray cupcake tin with cooking spray

  4. Place one pineapple slice on the bottom of each cupcake.

    If you are using regular-sized cupcake tin cut the pineapple slice in 1/2 in order to fit properly. I like to use the jumbo muffin tin.

  5. Sprinkle brown sugar on top of each pineapple

    You can also use Raw sugar.

  6. Fill each muffin cup two-thirds full with cake batter.

    Bake according to instructions on the box or until a toothpick inserted in the center of a cupcake comes out clean.

  7. Flip upside down and place cupcakes on a cooling rack.

  8. Sprinkle brown sugar on the top followed by a drizzle of remaining pineapple juice.

  9. Garnish each cupcake with a cherry.
