How to make Homemade Vegetable Soup

How to make homemade Vegetable Soup using vegetables, seasoning, and anything else you want to throw in.

As soon as the weather turns cold I start thinking of soups. That’s really the only time I thoroughly enjoy them. My husband can eat soup all year long and never get tired of it.  Because of that, he’s got a few good soups under his belt. This is his easy homemade vegetable soup recipe. Not only is it good, but it’s also good for you and worth passing on.

As you know, cooking is not one of my favorite things to do.  Baking is. I would rather clean my kitchen than cook in it. Luckily for me, my husband is assigned to cooking duty around Duke Manor Farm. This recipe is actually so easy, that even I can handle making it.

 How to make Homemade Vegetable Soup Recipe

Ingredients

  • One quart of V8 Juice ( check out all the V8 options including the low sodium)
  • 1 package of mixed frozen veggies ( corn, green beans, carrot pieces)
  • A bag of small potatoes
  • large carrots- cut into slices
  • 2- 3 cans red kidney beans (light)
  • Seasonings- chives, Italian season, minced onion
  • One 12 oz can of diced tomatoes

If you are a meat eater and the thought of kidney beans just not cutting it for you, cooked lean ground beef or stew meat are great options in this soup.

Here’s what you do

  • Put all the above in a crock pot and cook on low for 6-8 hours. Depending how you like your vegetables cooked really depends on how long you cook the soup. That’s it. Not too complicated.
  • Let the soup cool enough to eat.

It’s really the perfect recipe for someone who can’t or doesn’t like to cook. Serve with a salad as well as some bread and you have a great meal.

  1. Well I’m glad there’s someone out there like me! I don’t think that cooking is difficult, I just think I can’t stand the mess you have to deal with after! LOL! I’ll stick to cleaning, painting, and occasionally cooking:)
