This Vanilla Layered Cake with fresh berries is the perfect blend of fruit, vanilla cake, and cream cheese frosting. It would be perfect for your next party or to make for a friend! Let me show you how to decorate a cake with fresh berries.

This cake couldn’t have been easier and more fun to whip up for Lily’s birthday last weekend. Of course, I could have followed the original recipe and made it from scratch but instead grabbed some vanilla cake mix, cream cheese frosting, fresh blueberries, and strawberries and put the cake together.

How to decorate a cake with fresh berries, especially the flower on top was the best part of the cake in Lily’s opinion. Mine too, but it also was the combination of the cake, frosting and fruit together. Each bite was better and better. I have already thought of how I would modify this cake for the next time. I’ll tell you below.

Ingredients

1 box of Vanilla cake mix

1 tub of cream cheese frosting

1-2 cups of fresh blueberries

1 cup of fresh strawberries (sliced)

How to make the Vanilla Layered Cake with Fresh Berries

Step one – prepare cake mix. Preheat open and Follow the directions on the box. You can also make the cake from scratch using your own recipe or the one that I linked above.

Step two – bake the cake. Follow directions for baking time on the box. For this cake, I used three (3) 6-inch cake pans.

Step three- let cakes cool completely. Let the cakes cool completely on a baking rack before decorating. If you are in a hurry place the cake layers on some parchment paper and place in the freezer to cool.

Step four- spread frosting and fruit on each layer. Apply a generous amount of cream cheese frosting on the first cake layer. Apply sliced strawberries around the circle of the cake and blueberries on top of the frosted layer.

Step five- repeat the pattern. On each layer apply frosting and fruit. If you want a taller cake you would continue this pattern until you got to your last frosted layer (top).

Step six- make your flower design. To make the flower take your sliced strawberries and create a flower/star shape. Put your blueberries in the middle of the flower. Repeat the process of layering on the strawberry slices so that it overlaps your flower shape.

The best part of decorating this cake is the fun you will have creating the flower on top. Remember it does not have to be perfect. We will still love and eat the cake!

What I may do differently next time I bake this cake

  • Use angel food cake or pound cake.
  • Lightly skim the sides with frosting
  • Replace the frosting with whipped cream in between the layers and on top.
  • Mix in other fruit like oranges or pineapple slices.

Since I had to make two cakes for the twins, I made Jacob a red velvet cake. It was equally as delicious.
