The Beyond Easy…and Amazing Chocolate Chip Cookies that any level baker can whip up this holiday season.

Okay. You sitting down? I baked some cookies. Shocker to some that know me….. pleasantly surprised to others. You see, the kitchen is not my favorite place to hang out….unless I am baking or making something good to eat. For as long as I have been married the deal with my hubby is he cooks, I clean. A marriage made in heaven. Not meaning to brag, but he also does the grocery shopping….. I know right!

The Beyond Easy...and Amazing Chocolate Chip Cookies

I went to a cookie swap last weekend and showed up with my favorite ‘beyond easy and amazing chocolate chip cookies’. My girl Lily and I hung in our jammies all afternoon and baked cookies. We had a few too.

The Beyond Easy…and Amazing Chocolate Chip Cookies

Ingredients

2 1/2 flour

3/4 tsp baking soda

1/2 tsp baking powder

pinch of salt

2  1/4 sticks of soft butter

3/4 cup sugar

3/4 cup brown sugar

Large Egg

1 1/2 tsp butter nut vanilla extract  ( if you can’t find use regular) The butter nut vanilla is my secret ingredient. 

1 1/4 bag of semi -sweet chocolate chips ( 2 1/4 cups)

What you do:

  • preheat oven to 375
  • Spray baking sheets with nonstick spray – do not use butter to grease down your pans.
  • In a bowl mix your flours, baking soda, powder and salt together.
  • Blend your butter sticks and sugars together in another bowl. Beat until it is mixed well. Beat in your egg and vanilla.
  • Mix in your flour mixture until blended. ( You can add a little bit at a time to insure that it get’s mixed well)
  • Stir in your chocolate chips….before you eat them all.
  • Drop your cookies using a spoonful size amount on your cookie sheets about 2 inches apart. The cookies will spread so make sure they are spaced  well enough on your sheet.
  • Bake the cookies for 10 mins or until they are golden brown ( light brown if you want real chewy)
  • Let the cookies cool for a couple mins on the backing sheet before you transfer them to a wire rack.
  • Eat as needed.

I have a feeling we will be making more of these cookies over the holidays……and probably in our pajama’s.

Looks amazing and love your helper!….Now when I sent my hubby to the grocery store for an orange (which he ate prior) that I needed for a recipe for a dinner party….he came home with a grapefruit!….Now I must admit this grapefruit had a lot of orange in the rind, but nonetheless it was a grapefruit….I sent him back to the store and made him text me a picture before he bought it!…Now he is getting better and have to admit he is more than willing to make the trek to the store when I need him too….so can’t be too hard on him…and it made for great dinner party humor!….Good job Laura the baker!…Merry Christmas!!
